Galaxies far far away are full of asteroid fields that only top pilots can navigate.
Luckily, these asteroids are actually made of chicken with a quinoa crunch! The perfect dinner for young padawans.
- Coconut cooking spray (can be substituted for other spray)
- 170g uncooked quinoa
- 470g chicken broth
- 80g flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 3 eggs
- 2 tablespoons water
- 3-4 boneless skinless chicken breasts, cut into 2-inch pieces
Preheat oven to 220 C and grease a baking sheet with coconut cooking spray.
Meanwhile, cook quinoa in chicken broth according to package.
In a small bowl whisk flour, salt, pepper, and garlic powder. In a second bowl whisk eggs and water. Place quinoa in a third bowl.
Dredge chicken pieces in flour mixture, then egg mixture, and lastly in the quinoa, being sure to coat well. Place on prepared baking sheet.
Spray chicken nuggets generously with cooking spray (this helps the nuggets get crispy) and bake for 15-20 minutes until nuggets are cooked through and browned. Serve with your favourite dipping sauces!
