Epcot Grilled Salmon

Bring a taste from the Epcot International Food and Wine Festival at Walt Disney World Resort in Florida home with this Grilled Salmon recipe.

Served on a bed of quinoa and gently spiced with a chimichurri sauce. This salmon dish can be prepped in advance for a quick midweek dinner.

What You'll Need
  • 6 salmon fillets, skin removed
  • 1 teaspoon garlic salt
  • 50ml lemon Juice
  • 50ml olive oil
  • For chimichurri Sauce : 1/2 a bunch of coriandar, coarsely chopped, including the stems
  • 1 large pack of rocket roughly chopped
  • 100ml olive oil
  • 1 sprig of mint
  • 3 tbsp of lime Juice
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp minced garlic
  • 1 tbsp red wine vinegar
  • For quinoa salad & dressing : 80ml olive oil
  • 50ml lime Juice
  • 1 tsp minced garlic
  • 1 tsp white wine vinegar
  • 1/4 tsp cumin
  • 250g uncooked quinoa, cooked per instructions
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 1/2 red onion, diced
  • 1 small tomato, diced
  • 1 small tin of sweetcorn
  • 25g coriander
How to Make It
  1. Combine garlic salt, lemon juice, olive oil in a small bowl. Place salmon in large resealable bag, add the marinade and turn until each fillet is evenly coated.

  2. Refrigerate for 30 mins. Remove salmon from refrigerator at least 10 mins before cooking.

  3. Preheat oven to 200c / 180f, cover a 15 x 10inch baking sheet with aluminum foil and spray with non-stick cooking spray. Place salmon on a baking sheet in a single layer, evenly spaced.

  4. Bake 15 mins or until the salmon easily can be flaked apart with a fork.

  5. For chimichurri sauce place all ingredients in blender and blend for 10 seconds on medium until everything is evenly blended. Place in fridge.

  6. For quinoa salad, mix all ingredients together in a bowl and toss with the dressing.
