Belle’s Rose Petal Vegetable Tart

What You'll Need
  • 200g flour
  • 50g light cream cheese
  • 80g of melted butter
  • 3 courgettes
  • 4 carrots
  • 3 eggs
  • 200ml of skimmed milk
  • Olive oil
  • Mustard
  • Salt and pepper
How To Make It
  1. Pour the flour, a pinch of salt, the melted butter and the cream cheese into a bowl.

  2. Mix with your fingertips.

  3. Form a ball and let it rest for 30 minutes at room temperature.

  4. Preheat the oven to 180'C/160'F

  5. Flatten the dough by rolling it to form a circle.

  6. Place the dough on a non-stick or lined pan and prick it with a fork.

  7. Place cooking paper and porcelain balls on the bottom of pie and blind bake for 10 minutes.

  8. Wash the vegetables and peel the carrots, then cut into very thin strips with a mandolin.

  9. Cook the vegetables for 3 mins in water or steam to soften.

  10. Wrap the vegetable slices around themselves to form roses. You can layer more than one together to create larger roses.

  11. Coat the base of the tart with mustard then arrange the vegetable roses inside.

  12. Mix the eggs and milk together in a bowl then pour over the top of the roses.

  13. Brush the tops of the petals with olive oil then bake for 30 mintues.

  14. Enjoy!
