Lightning McQueen needs to keep his energy levels high when racing in the Piston Cup.

This pea based guacamole and whole wheat pitta chips are certain to hit pole position with the little racers in your life.

What You'll Need
  • 120g frozen peas
  • 1 small avocado, peeled and seeded
  • 50g coriander leaves
  • 2 spring onions, finely chopped
  • 1 tsp chopped chili (optional)
  • 1 tsp chopped garlic
  • 3 tsps lime juice
  • 2 tbsp water
  • 1/2 tsp salt
  • 3 whole wheat pittas, cut into 8 wedges
  • 2 tbsps extra virgin olive oil
  • 1 tsp garlic powder
  • 1/4 tsp salt
How to Make It
  1. For the guacamole, combine all ingredients in the bowl of a food processor.

  2. Puree until as smooth as you’d like.

  3. Let the guacamole chill in the fridge for 30-45 minutes for the flavours to blend.

  4. For the pittas, preheat the oven to 200c/180f.

  5. Place pitta wedges on a baking tray and sprinkle with olive oil, garlic powder and salt. Toss the pittas with your hands to evenly cover.

  6. Spread into a single layer and bake for 8-10 minutes until lightly golden.

  7. Serve with the pea guacamole.

You can also serve this guacamole with thinly sliced veggies for a healthier alternative.
