What You'll Need
  • 8 chicken legs, skin removed
  • 115g sugar-free orange marmalade
  • 1 tbsp olive oil
  • 120ml fresh orange juice
  • 1 tbsp orange zest
  • 2 sprigs of rosemary
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 240ml balsamic vinegar
How to Make It
  1. Preheat oven to 180c

  2. Heat frying pan over a medium heat, add the olive oil.

  3. Once warm, add the chicken legs.

  4. Sprinkle with the salt and pepper, browning them on each side for 3-5 minutes. Take chicken out of the pan and rest on kitchen paper.

  5. In the same pan add the balsamic vinegar, marmalade, rosemary, orange zest and juice. Cook for approx 5 minutes until the sauce has reduced, stirring the whole time.

  6. Place chicken back in the pan and coast with the sauce. Line a baking tray with parchment or foil, put the chicken on the tray and bake for 25-30 minutes until well cooked.

  7. Serve with some healthy brown pasta or rice for a delicious supper.
