- 100g Blueberries
- 250g Natural Blueberry Yoghurt
- 100g Strawberries or Raspberries
- 250g Natural Strawberry or Raspberry Yoghurt
- 100g of Kiwi deseeded
- 2 limes, zested.
- 250g Natural Yoghurt
- 1 tbsp.of honey
- Natural food colour (blue, green, red)
- Edible Glitter
- Plastic Wrap
Place the blueberries and blueberry yoghurt in a bowl with a little honey, add blue food colour. Blitz with a stick blender.
Clean the stick blender and repeat the process again with the raspberries and rasberry yoghurt and red food colour, and then again with the kiwi, lime zest, natural yoghurt and green food colour.
The idea is to get three different coloured fruit yoghurts.
Layer the yoghurt mixture randomly in big dollops into a clean dish.
Next run a butter knife through the yoghurt mixture a few times in each direction to swirl the colours together. Be careful not to over-mix, you want them to subtly run into each other to create the Northern Light swirl.
Add glitter to the top of the yoghurt.
Cover the dish with plastic wrap and freeze for 8 hours, or until the frozen yoghurt has set.
Scoop the yoghurt into jam jars to serve and sprinkle with edible glitter.
