These homemade cheese-filled lettuce cups and tea time sandwiches are fit for all regal parties in your life.
- 8 slices whole grain bread
- 16 small lettuce cups
- 2 carrots, julienne
- 1 cucumber, julienne and thin slices
- 900g fat-free plain Greek yogurt
- 1 small red pepper, chopped
- 3 cloves garlic, finely chopped
- 2 tbsp fresh chives, chopped
- 1/2 tsp salt
- 1/2 tsp pepper
For the homemade red pepper yogurt cheese, combine half the yoghurt, red pepper, 1 clove garlic, 1/4 tsp salt and 1/4 tsp pepper in a food processor. Blend until smooth.
Place a metal strainer lined with cheesecloth or a paper coffee filter over a bowl.
Pour the red pepper cheese mixture into the strainer, cover and let sit overnight in the refrigerator.
To make the chive yogurt cheese, in a bowl combine the other half of the yoghurt, chives, 2 cloves of garlic, 1/4 tsp salt, 1/4 tsp pepper and mix.
Pour the chive cheese mixture into a second strainer lined with cheesecloth, cover and let sit overnight in the refrigerator.
For tea sandwiches, spread a thin layer of the red pepper yogurt cheese on both slices of whole grain bread.
On one slice, cover with thinly sliced cucumbers.
Place the second slice on top, remove the crusts and cut diagonally to make four small tea sandwiches.
For some gluten free lettuce cups, use the inner leaves of a lettuce and fill each cup with a spoonful of the chive yogurt cheese.
Top with julienne carrots and cucumbers. Enjoy!
