This sweet breakfast quinoa is packed full of fibre, milk and fruit. The perfect start to the day.
- 200g quinoa, rinsed and drained
- 450ml milk, or non-dairy milk
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1 tbsp brown sugar
- 1 apple, cored and diced into 1cm cubes
Combine quinoa, milk, vanilla, cinnamon and brown sugar in a large saucepan.
Bring to a boil over a medium heat, stirring frequently to keep the milk from burning.
When it starts to boil, immediately reduce the heat to low and cover.
Simmer for 15-20 minutes until the quinoa has absorbed most of the liquid.
Stir in chopped apple and divide between 4 bowls.
