While broccoli normally triggers Disgust’s defences, this version passes on every level!
Packed full of fresh tomatoes and broccoli, this healthier pizza will be a hit with everyone.
- Ready made pizza bases (wholemeal if available)
- 5 ripe tomatoes
- ¼ head broccoli, cut into bite sized pieces
- ½ garlic clove, smashed and minced
- ½ garlic clove, thinly sliced
- Zest and juice from ¼ lemon
- Grated low-fat mozzarella cheese
- Chilli flakes (optional)
- Parmesan shavings
Chop tomatoes finely and place into a bowl.
Heat 1tsp of olive oil in a large pan. Add smashed and minced garlic and cook until fragrant, about 20 seconds. Add broccoli, chilli flakes. Turn heat to low and cook, stirring occasionally until the broccoli is cooked, but still has a bite to it.
Fold in the lemon zest and season with lemon juice and salt.
Heat oven to 220c/200f. Arrange your pizza base on a baking tray and sprinkle with a generous dusting of semolina. It helps add crust. Spread the finely sliced tomatoes over the base. Sprinkle the mozzarella cheese over the top then finish with chilli flakes and broccoli.
Place in the oven and bake until the dough is cooked to your liking and the cheese has melted. Grate fresh parmesan over the top and serve.
