Become the fastest racer in the kitchen with these deliciously tangy balsamic glazed chicken drumsticks.
Perfect for a quick midweek dinner and a breeze to prepare.
- 8 chicken legs, skin removed
- 115g sugar-free orange marmalade
- 1 tbsp olive oil
- 120ml fresh orange juice
- 1 tbsp orange zest
- 2 sprigs of rosemary
- 1/4 tsp salt
- 1/4 tsp pepper
- 240ml balsamic vinegar
Preheat oven to 180c
Heat frying pan over a medium heat, add the olive oil.
Once warm, add the chicken legs.
Sprinkle with the salt and pepper, browning them on each side for 3-5 minutes. Take chicken out of the pan and rest on kitchen paper.
In the same pan add the balsamic vinegar, marmalade, rosemary, orange zest and juice. Cook for approx 5 minutes until the sauce has reduced, stirring the whole time.
Place chicken back in the pan and coast with the sauce. Line a baking tray with parchment or foil, put the chicken on the tray and bake for 25-30 minutes until well cooked.
Serve with some healthy brown pasta or rice for a delicious supper.
